Tropical Sunshine Smoothie Bowl – Vegan & Healthy

How’s everyone living on lockdown?

 

Staying indoors is making me feel so blah! I’m trying to incorporate more and more smoothie bowls into our routine because let’s be honest, they’re delicious and nutritious! My family loves to drink our smoothies, ok. Having a smoothie bowl as a snack helps us get all of our vitamins and nutrients for the day. I love this Tropical Sunshine Smoothie Bowl recipe because it has a LOT of vitamin C and perks up my lockdown mood right away!

Ingredients: (Smoothie Bowl Base)

  • Frozen Mango Chunks
  • Frozen Strawberries Whole
  • 100% Pineapple Juice
  • Orange Juice
  • Lemons (or Lemon Juice)
  • Almond Milk (unsweetened or sweetened based on taste preference)

 

Ingredients: (Toppings)

  • Whole Cashews
  • Shredded Coconut
  • Kiwi
  • Blueberries
  • Optional: any other seeds, nuts, or tropical fruits you might like!

 

Steps to Make a Tropical Sunshine Smoothie Bowl

 

  1. Add in fruits and juices – blend. While blending add a splash of Almond milk to smoothen the texture,
  2. While blending, wash and cut up the fruits for on top
  3. Pour the mixture into the bowl
  4. Starting in the middle add the toppings in straight(ish) lines
  5. Put in the freezer for 3-5 minutes to stiffen up the smoothie
  6. Enjoy!
