Tofu Breakfast Hash – Vegan Breakfast Recipe

This is one of my favorite breakfasts! It’s hard to get a high protein breakfast as a vegan. Substituting tofu or other vegan proteins for typical breakfast meals (like eggs) is an easy way to hit protein goals. I like this recipe because it delivers on flavor and it can be made ahead of time and saved in the fridge for breakfasts for the whole week. You can also easily add sauces like tomato to give it a little extra flavor too! I like to enjoy my Tofu Breakfast Hash with a side of berries to start my day with a light, but very filling meal!

Ingredients

 

  • Extra Firm Tofu Brick
  • Red Onion
  • White Button Mushrooms
  • Frozen Kale
  • Paprika
  • Salt
  • Pepper
  • Garlic Powder
  • Fruits (for side dish)

 

Directions
  1. Divide the tofu brick in half, then cube the one half. Dice the red onion and button mushrooms
  2. Heat a pan to medium low heat with olive oil. Once warmed, add the red onion and mushrooms. Sautee until soft.
  3. Add diced tofu, salt, garlic powder, paprika, pepper (seasonings all to taste) and cook until light brown on all sides.
  4. Add frozen kale and cook for 1-2 minutes
  5. Plate and enjoy!
